California garlic, the variety used in making braids and wreaths, is harvested between late June and mid-August. It’s a labor-intensive effort, as the roots and stems must be clipped by hand. If properly stored, garlic will keep about eight to nine months from the date of harvest! Garlic should be stored, in a cool, dry place with plenty of circulation. We recommend that it be kept in a ceramic keeper, a bag made of cotton mesh, or even a paper sack. Don’t store garlic in plastic or the refrigerator. Your garlic will begin to turn brown and dry out sometime between March and June. But you can save most of it by peeling the cloves and freezing them. |
